I believe you are thinking of Windows. Office, especially on Mac, is not much of a target. You are far more likely to get a pfishing email than have an inherent security problem with Office.
Correct. Microsoft only supports the three most recent versions of macOS. You'll have to use something else such as the free LibreOffice.
You can continue to use your Microsoft apps on macOS 12.7.6. You just won't get any updates. But the apps are perfectly fine to use.
