Why does macOS want access to my gmail account?
I don’t understand why Mac wants to control my email on my MacBook Air and my iPhone
MacBook Air 13″, macOS 15.3

This is probably because the User ( you ) Added Gmail to the Mail Applications in macOS and iOS
The Control of your email is Controlled by Google Services, Not by Apple per se

Then why do I have to agree to macOS being able to read, delete add to my emails my contacts, etc in order to be able to receive my email. At this moment, I cannot get my email through my Apple account. This occurred after I signed into Google and also after the latest software update.
If you want to use Apple's Mail program to access your Gmail, you need to give it those permissions. Until you do, you won't be able to get your Gmail.
I for one.
Would very much like to thank both @IdrisSeaBright 👍 and @Mac Jim ID 👍 for joining your question and providing additional useful information
Google g-mail may require additional preparations before it will work
An app password is a 16-digit passcode that gives a non-Google app or device permission to access your Google Account. App passwords can only be used with accounts that have 2-Step Verification turned on.
This same process is required from Apple when using a Non Apple email Application to access iCloud mail

That is simply the third party security message that many email providers now use when you want an app to access your emails instead of using a web server. Xfinity is the same way, although the security message is much more clear. Otherwise the account is limited to web access.
Google uses a poor explanation of this setting making it seem like the computer is actually reading your emails. Ironically it has only been Google that has been caught reading the emails from users Gmail account and targeting them with ads based on their content.
All it is asking is if you want to use the Mail app, instead of web access, to read, delete, and add emails that are currently on the Google servers.

Sorry but nothing in the above makes a sense.
To get g-mail in the Apple Mail applications you have to Add Google G-mail to each Mail application
" MacBook Air 13″, macOS 15.3 " Sequoia and not macOS 14 Sonoma
Add email accounts in Mail on Mac
Add and remove email accounts on iPhone

Thank you for taking the time to explain this to me - much appreciated
