First on the old phone, make sure you are syncing everything with iCloud. Settings > Your Name at the top > iCloud > make sure you have the switch on for everything which can be synced. Give it time to sync if you haven't been doing that.
Personally, I think QuickStart is the simplest, best way to move your data to a new phone. It happens over the air and when completely everything will be moved to your new phone. You will still have to set up Apple Wallet cards again on the new phone. You may have to sign in to some social media accounts with your password, if prompted. You will have pair Bluetooth devices to the new phone, using the pairing method as detailed by the manufacturer of the Bluetooth device.
