Although I too favor the press and hold of the 'e' key for the selection of the acute (´) accent, one can also press and hold the option key, first typing 'e', releasing the option key, and then typing 'e' again.

In Pages on a Mac, hold down the e key when you type it and it will display a list of accents that you can choose from.
I've been a Mac user—business and personal—since mid-1980s, using Pages in recent years.
This is the first I have even heard of a Pages User Guide.
I look forward to picking up many tips in the days ahead.

Not just Pages -- virtually anywhere you enter text on your Mac, including this forum "cliché", Microsoft Word, Text Edit, etc.
