You Can't: The spreed of charging cannot be controlled; there is not setting of such. You need to know what you are running, and what Battery Health you need, simply by optimizing it. As for defending "slow", that would be preferential.

Apple recommends you get a new battery, once the Battery Health reaches 80% or lower. When the Battery Health is 80% or lower, it is time for a new battery.

2. Tap: Battery
3. Tap: Battery Health
4. View: [the percentage]
5. Is it 80% or less?  If so, it is time for a new battery.

III. Perform a Restart:

If you want to slow charge your iPhone buy or use a lower wattage charger. The lower the wattage the slower the charging. Anything under 15 watts should slow things down.

The higher the wattage charger, the faster your battery will charge, up to about 40 watts. Anything above that is fine, but the charge rate hits its peak around 40 watts.
