How do I get my Apple Watch to track my outdoor walk?
Some times when I ask my watch to track my outdoor walk it does it and other times it asks which app do I want it to use.

Using Siri has its shortcomings if you have multiple workout apps.

I also add a workout "complication" to my morning watch face. Just tap it.
First I would open the watch app on your phone, go to settings and check for updates. Next I would go to activity and turn tracking on, finally I would hop to health and make sure it’s active

Those settings are on by default, and the questioner would not get Siri to start a workout occasionally if they were not active. The question is one of reliability under the stress of activity. Intermittent failures require thinking outside the box.
