Why does my Mac only detect both displays when plugged in simultaneously?

Hello,

Here is my setup:

M4 Air, lid closed

Two external monitors (Acer XV275K)

Each monitors is connected with it's own USB C cable directly to the Macbook

If I plug both monitors in at the same time, both will be detected, and I can use dual screen. However, if I disconnect one, and reconnect it, it will not be recognized no matter what I try. I can plug/unplug each monitor, and they will both work independently, but the only way to get both to work is if they're plugged in simultaneously.

I've tried clicking "Detect Displays" from setting to no avail.

Does anyone have any knowledge of why this might be, and if there is a better solution than having to plug both monitors in at the same time.

Thank you.
