Among other ways, creating a new tab uses the Command-T (⌘T) shortcut.
The ⌘T is a common new-tab shortcut in many apps.

Safari is no more difficult than any browser.
Big +1.
Any browser you haven't used before takes a bit of time to learn. Yes, it's a browser and they all do the same basic things, but buttons aren't in the same spot, preferences aren't laid out the same, etc.

File > New Tab or just press the "+" button on the upper right of the Safari page.
Of course there are also keyboard shortcuts and customization options just like all browsers that will put these very basic features right in your tool bar. Review the information provided for Safari to take advantage of all the features. None of it is very difficult.
