I am trying to use the ES P Poly Synth to create some white noise but the interface that comes up for me (top photo) is not the interface that appears on YouTube videos (bottom photo) explaining how to do it. I have a black background interface with no option for 'noise'

You are looking at the (Black) Smart Controls area rather than the plugin itself
Double click the instrument plugin in the Inspector channel strip to open the Plugin UI
