When setting up my new iPhone 17 Pro it asked me if I wanted to update to IOS 26 and I chose to do it later. After finishing the setup my 'About' says I'm on IOS 26 but also under 'Updates' it says IOS 26 is available. Should I go ahead and tell it to update?

That would be an update from the version of iOS 26 that was current when the phone was manufactured versus the version that is current for that model today. I let my 17 Pro Max update (to 23A345) before migrating my data, and things are running fine. It should be safe now, but no guarantees.
