I created a spreadsheet with 1 header row and entered values in 21 rows and 14 columns. When I re-opened the saved file, the first row now has all 21 rows squeezed into it. Apparently I entered data in the header row and header column. Can't find a way to delete the row with all the data rows embedded in it. Help?

It looks as if you have duplicated the table by mistake - perhaps by having option key down when you dragged.
Go the the sheet 'tab' at the top, click it, and see if multiple tables are listed in the dropdown.
If there are, choose the one ending with -1 (the duplicate), then click the concentric circles "bulls-eye" to its upper left, and hit the delete key.

Can you post a screenshot? Command Shift 4 then select the rectangular area you want a shot of. The screenshot will probably go to your desktop. Use the "mountains and sun" icon to post it here.
Header rows and columns are not that different from the rest of the cells, they just have a few special features. It is unlikely the problem was caused by typing into header rows or columns.
