Use of Pages version 14.4
Is there a way to prevent this version of Pages from trying to anticipate my words and allow me to complete the word without interference?

This is a system-wide setting. Go to System Settings > Keyboard & click Edit… next to Input Sources then deselect "Show inline predictive text.
