Apple charging for a canceled subscription and removing music
Apple keeps charging me for a subscription I am nolonger using and it has removed my music even though it charged me on the 7th of November

It is not clear from your post when you cancelled, if you were using a free trial, when that trial/subscription expired, or what you have showing in your Purchase History.

It certainly is possible to owe money if not cancelled at least a day before renewal of the end of a free trial. When you do cancel, your music/playlists created with the subscription will be removed, but you still owe the money from a previous charge.
Not using the app makes no difference on whether you will be charged for a subscription you had already agreed to, it would still need to be cancelled by you. If a previous charge was unable to be processed due to a billing error or lack of funds, those attempts will continue until the issue is resolved.
