Any chance Apple will ever backgrade iTunes back to where it is useful again? Ever since it removed the ability to sort the apps, etc, on your iPhone or iPad, it's just become increasingly useless and excessively large for what it does (many other less resource-hogging apps that do what it does). Any recommendations for programs to sort and organise my apps would be greatly appreciated. I use Windows 10 and no longer have a Mac.

No programs, you'll have to manually organize your apps.
