I accidentally ended a workout on apple watch and immediately started a new one. iIt was an outdoor walk. Is it possible to merge the two walks into one?

Within 24 hours after your workout, you can add data to the Health app manually, to effect your rings.
In your case, add up your efforts, then create a new entry, as explained in the article, then delete the old data.
