The refund process would be the same as any other App Store purchase where you go into it expecting that all transactions are final. Is some cases, Apple may provide a compassionate refund, but you cannot expect that to mean you get a free trial when there is not one.
There simply is no way to try it out without a free trial, so I would look elsewhere. I have the older version of Pixelmator, so I would be unhelpful in testing a specific workflow for you, but maybe someone else will chime in that could help.

On the other hand, Affinity now offers the Affinity Studio free forever. Developer, Photo, and Publisher all in one integrated application, no subscription, and no Canva purchase requirement.

Because I need to see if my workflow would work with Pixelmator Pro. One thing I'd like to test is if I can move a project back and forth between Pixelmator Pro and Pixelmator iOS by using a .PSD file format.
Yes I saw that Affinity by Canva is released, they don't have a iOS companion app yet (I'd like to move between my Mac and iPhone). Also Affinity is somewhat overwhelming for me, hoping Pixelmator might be a better match for my needs. Also wanted to test Sketchbook for my workflow but they don't have a trial for the Mac app either.

Yes, to test Pixelmator Pro and iOS workflow I would have to buy both apps unseen. Sadly the same is true for my runner up alternative. But thank you for your help. And if anyone reads this and have both apps please let me know 🙏
