First thoughts:

  • Uninstall everything Google. It might be coincidence, but there is an alarming correlation between Google software and slow Mac performance.
  • Your Fusion Drive may be reaching end-life. SSD components typically last for a 1,000-2,000 write/erase cycles, and with 33 TB written the little 28-32GB SSD is now past the 1,000x mark. Also the drive's Write speed is now slower than expected.
  • 8GB RAM is not enough memory for Adobe Creative Cloud use.

Rather than spending money on an obsolete iMac, consider replacing it with a new M4 based Mac mini and the display of your choice. This machine would be dramatically faster than your current machine which cannot run current versions of Mac OS and Apple will no longer work on it due to the availability of parts. It just doesn't make sense to spend money on an almost 7 year old Mac.

with respect, I would not call 2019 iMac hardware "obsolete" -- maybe the Apple fusion technology of incorporating HDD (and minimum RAM) in 2019 machines is

I have a feeling a beefy 2019 iMac (or 2017 iMac Pro) will be working for a lot of users after most the early M series silicon iMacs are tossed for any number of reasons, like bad screens and worn out SSDs you can't replace...

I've worked years on several 2010, 2012, 2014 Mac mini computers -- never had a problem or a complaint with them -- G5, MacBooks, Mac Pros a different story...
