I want to buy a new iPhone 17 pro with apple care in the UK, I work abroad in Hungary, usually for a couple of months to half a year every year, will I be covered abroad for cracked screen, broken phone or theft and lost?

It's at the discretion of the people at the service center. They likely won't have international iPhone models on hand for replacements, and therefore aren't obligated to honor warranties or AppleCare plans from outside their own country(except when both are in the European Economic Area or Switzerland).
