I canceled my AppleCare plan for my iPhone 11 since I got the iPhone 15 recently but the AppleCare plan on my iPhone 15 is showing for the 11 device instead of the 15. I’m not trying to get the AppleCare one plan since I only have an iPhone. Is there a way to still get AppleCare for my iPhone 15?

You can cancel the AppleCare plan on a previous phone, and if it is within the normal coverage period of that plan, you may ask for and receive a prorated refund from Apple of the unused remainder. That refund will be credited to the original credit card that purchased that AppleCare plan.
You cannot transfer an AppleCare plan between phones. You should contact AppleCare and ask if you can even subscribe to AppleCare+ for an iPhone 15 at this late date, unless you just acquired it from Apple Refurbish, where you can initiate AppleCare+ coverage within 60 days of that purchase.
