Stop Apple Updates

For iOS updates, Settings > General > Software Updates > Automatic Updates - turn it off.

Please NOTE: Every time you do update your iPhone, this setting will be reset, so if you really are update adverse, you'll have to remember to go back in an turn off updates again. You do understand that by not updating your iPhone leaves you vulnerable to exploits and you won't get any bug fixes, right? It's not wise to do this, but it's your phone.
