Can I keep a Macbook Air M4 plugged in all the time? Even when not in use, like when I’m sleeping? I don’t shut down my MacBook, it’s usually just closed when I’m not using it.

Leaving the computer plugged in will not damage the computer or the battery. I don't understand why no shutdown but you can do as you prefer. FWIW, I shut down whenever I will be away from the computer for about an hour or more. I leave it plugged in though.
Yes, you can keep the MBA plugged in all the time without a problem.
But the occasional reboot is not a bad thing as it triggers the OS to clear caches and do miscellaneous housekeeping.
