I want to remove the obnoxious red symbol from a blocked contact that appeared after update. Yes I want to keep that person blocked but I don’t like the obvious red symbol next to the name showing in contacts.

You can't do that. It's the way it is in iOS 26, which means it's hard coded and not customizable. How often do you actually open a blocked contact for this to even be an issue? If you don't like it, feel free to let Apple know here --> Feedback - iPhone - Apple
lobsterghost1 is correct, that look cannot be changed. But keep in mind if you've blocked that contact, you won't receive any of their messages and they won't receive yours. The same goes for calls. Which begs the question of why you need to keep them as a contact? Plus you can remove them from your contact while keeping them blocked.
