where do I find the email default on an iPad air 3? It's not under "mail" in settings
If you set up your iPad, then you had the option to configure your email account(s) with the Mail app. Each account that you set up would be located where rbrylawski had indicated. If you only have one account, that would be your "default" email account.
Email accounts are found in Settings > Accounts & Passwords
