lost data

So someone recently bought me an iPhone 8 as an upgrade from my iPhone SE! I wasn't there when they made the purchase, so the salesman did not transfer my data for me, as I've always done before. (I'm not very tech savvy). Not sure why, but my iCloud on my SE has never worked... and I was having problems with figuring out iTunes backup too, and was super busy so just started using the new iPhone without any data from my old phone. Tonight I finally figured out how to back up my old iPhone on iTunes, so I transferred all the data to my new phone. I did not realize however that it was going to remove all my messages, pictures, and notes that were on my new phone already. Is there any way I can get that data back? Thanks for your help!
