I am converting some of my excel spreadsheets over to numbers. I want to move or copy a sheet from one book to another, but cannot find any options available to do that. (this is the first of, Im sure, many questions to come. :-))

Welcome to the Numbers for Mac forum!
If your question is about one Numbers document 'talking' to another Numbers document, that does not happen. Each Numbers document is self-contained and can refer only from one table to another table within the same document. The tables may be on different Sheets (Tabs) within the same document.
Perhaps you want to copy and paste a self-contained Sheet (that does not reference other Sheets) from one Numbers document to another Numbers document. Click on the "v" to the right of a Sheet name to reveal this menu.
Choose Copy Sheet.
Go to the other Numbers document and
