If you are syncing messages with iCloud, they are gone. You can check your carrier's web site to see if they store a copy on their server.

If you weren't syncing messages with iCloud, restore from a backup. Restoring from a backup erases all data currently on your device. Any data newer than when the backup was made will be erased. A restore is an all or nothing restore.
