I just moved from Aperture to Photos. When I go to view my Photos on Apple TV, it shows the folders and albums, but not all of them. I went into a folder called 2019 and it lists many albums, but not the latest ones which are on my connected iMac. Why is it not updating properly to show newer albums?

I would think it may be due to the setup in iTunes. Have updated iTunes to point to your new Photo library? As I may be still pointing to your Aperture library.
To check - iTunes>File>Home sharing>Choose photos to share with Apple TV the below window will appear.
Make sure tick box is filled, select Photos then click apply.
