We were gifted an iMac and I have not been able to update anything on it. This is because an apple ID is required and it's auto-filled with the previous owner's ID and we don't have the password. Is there a way to change the apple ID to mine, not the previous owners? Thank you!

Yes, the owner did erase it before giving it to us and I once took it to an "apple" store (knock-off, but the only thing we have here :( ) and they cleared it again and said we didn't need to remove the email address for updates. That doesn't seem to be true though.
Any app asking for the previous owner’s Apple ID needs to be Trashed. Then you need to download the app using your Apple ID’s Mac App Store account. If they are paid apps, you must buy them yourself with your account. The previous owner cannot “gift” you any paid apps on the Mac.
Erase the disk and reinstall macOS.
Did the former owner erase the computer and set it up again? If not, you need to do that to make it 'your' computer. Start with step 6.
