I don't understand why my reading list vanishes as soon as I open an item. What if I didn't have a chance to finish it or want to re-read an article?? Any insights anyone can provide would be most appreciated.

It sounds like you need to tap the “show unread button” in the Reading List in Safari. See attached screenshot.
