How to un sync my iPad from my iPhone

You can either log-out from iCloud on one of your devices (and/or use a completely different AppleID) - or, perhaps more usefully, turn-off all the iCloud services that you don’t want to sync across devices:

Settings > [Your Name / AppleID] > iCloud - selectively turn OFF anything that you don’t want to sync between devices.
