I think for Audiobooks you have to transfer them to the Apple Watch, so it does not matter if you have Cellular or just a GPS only model.
If you want to stream music, then currently Apple Music is the only option. If that is something you want to do vs storing your own music on the Apple Watch, then a cellular model could be useful. But as you can store you own music, or podcasts, or audiobooks on the Apple Watch, you an also skip the cellular costs.
The Apple Watch GPS only can do Everything the cellular model can do as long as your iPhone is nearby, where nearby is somewhere in the same 3-4 bedroom home (assuming typical wood frame construction).
If you want to leave your iPhone at home, and still make/receive phone calls, send/receive messages, stream Apple Music, etc... then a Cellular model can do that.
The Cellular model shares your iPhone's phone number, and carriers that support the Apple Watch charge a monthly fee for that service. In the U.S. the carriers that support the Apple Watch charge $10 per month, which is added to your iPhone monthly bill.
