Hi

I recently purchased a new iPad. Now when I download my emails I am getting hundreds of old ones. How do I stop this

from happening

Your iPad will attempt to download all email, from the email server, that is present in your email mailbox.

The behaviour that you describe suggests that any email that you believe to have been deleted, had only been deleted locally on your previous device - and not deleted from the mail server. This can occur, dependent upon your mail settings, when using a POP3 mailbox.

Unless you have good reason to avoid doing so, you might consider using IMAP for your mailbox settings - noting that you may have already done so when setting-up your new iPad.

When using an IMAP mailbox, any mail deleted from your device is also permanently deleted from the email server - and thus cannot be downloaded again. IMAP is designed to keep email on all your devices (such as your iPhone if you have one) in perfect synchronisation.
