I used to be able to say, "hey Siri set a timer for 5 minutes" and it was done. then along came watchOS 6. Now I say the above and it says there is no timer app installed and takes me to the App Store. Any suggestions--I know I am not alone in this.

Go through the steps listed under section titled "If Siri doesn't respond or asks you to try again", and then test to see if the issue persists.
If the issue persists, unpair your watch from your iPhone and then once you have paired it back again, test to see if the issue remains.
