I would like to delete certain items (documents, pictures, etc.) from iCloud but still want to keep them available. If I delete a document or picture from iCloud does it stay on my computer? If not, is there some way to assure that it does stay?

iCloud is a syncing service. It design is to keep content the same on each subscribed device.
Documents in the iCloud Drive, Documents and Desktop folders can be optimized. They will still be present in some way on your Mac.

Appreciate the response, but I'm not sure I understand it all. I have an external hard drive already for storage so I don't need iCloud as much as some others might. For really important stuff, sure. But lots of my documents aren't critical. I see them in Finder under both the "documents" tab and the iCloud Drive tab. Your answer was that if my folders are "optimized" they will still be present in some way on the Mac. How do I optimize them? Since iCloud is currently full the easiest solution for me would be to click delete on the iCloud version of what I don't need, but I want to make certain I'm not messing myself up by losing them from the computer too.

Yes, thanks. I had already done the types of things that were recommended there. The problem is the links seemed aimed at solving a problem different from mine, i.e. how store documents in the cloud to free up space on your computer. I have the opposite question, how do I delete documents from the cloud to free up room in the cloud, while making sure that I still have them on my computer. Unlike a lot of people I have plenty of room on my hard drive. It's iCloud that keeps sending me messages that "iCloud storage is full."
Maybe I'm not asking the question the right way, or maybe it's just unresolvable. I may be trying to use iCloud in a way it's not intended to be used. I just wish I could confidently hit delete to a picture or document that is in the cloud and still be sure that I'll have it on my computer.

Using Finder, move them to a different non-iCloud syncing folder on your Mac.
Once removed from the syncing folder, they will be on your Mac, but not iCloud.
