screen shot button disappeared from control center after update

You may be confusing Screen Shot with Screen Recording.

To take a screen shot you need push the side button + the volume up button together.

To see the screen recording button in the control center:

Open Settings ➔ Control Center ➔ Customize Controls ➔ Scroll down to MORE CONTROLS and add Screen Recording using the green + sign.
