I've just got the Iphone11 pro and as I was setting it up it asked me to do a software update, its now been stuck on the install now screen for 3 hours.
Any idea what to do?

It should not take anywhere near that long. I suggest that you try a forced restart and hope that it will update. You could end up having to restore the phone if nothing works and that means that you will need to use a computer running iTunes for that.
In order to force restart the phone, Press and quickly release the Volume Up button. Press and quickly release the Volume Down button. Then press and hold the Side button until you see the Apple logo.
