My Macbook Pro is running High Sierra and I still don't have the option for Dark Mode. Under "General" in System Preferences I still have the old options - nothing about dark, light or auto mode. Any tips on how I can get it? Thanks!

Dark Mode is a feature of MacOS 10.14 Mojave. It is not available in High Sierra.
