How can I off-load emails to an external drive?

You can drag and drop individual emails right out of the Mail app and into a folder or your thumb drive in finder. Alternatively, you can export whole mailboxes at a time, by right-clicking on a specific mailbox, and a context menu will appear. Select Export Mailbox, and select your destination in the sheet that comes up.
