Answer to your first question, on the new device, simply login (login screen) with your Apple ID and password and your data will populate to the new device.

Answer to your second question, on the new device, you will see a screen asking if you wish to restore from a backup -- Restore your iPhone, iPad, or iPod touch from a backup - Apple Support.
