I ordered a MacBook Air i5 processor, 8 GB memory and 1 TB storage on Thursday, August 6, 2020. Today I signed in to check the order status and saw that it is still under "processing". How long do MacBooks usually take to get shipped?

It depends on when you order (lead times increase/decrease over time due to demand, availability, etc) and on the configuration. A MacBook Air ordered today with that configuration shows an estimated delivery of August 27 - Sept 3.
The estimated delivery shown when you order and in the order confirmation is usually pretty accurate. I had a recent order that arrived on the first day of that estimated date range. It showed as Processing until a day before it shipped.
