Consistent failure with Apple Configurator 2 when attempting to update or restore devices after iOS 14 release. Attempted clearing all cached IPSW files from library cache with issue persisting.

RESOLVED: I updated a device using Finder to iOS 14 and then connected to configurator which prompted a device driver pack download for compatibility and configurator now works for restoring and updating devices to iOS 14

After they fail the restore and loop back they need to be restarted for Finder to find them. Putting them in back into restore mode with press volume up, press volume down, then hold power while connected to the mac and Finder open was what did it for me.

Unable to as now 2 devices are in restore mode and Finder on Mac cannot find them
I was able to resolve by plugging iPhone 8 Plus into a machine running macOS Big Sur beta 8. Music.app was then used to restore iOS.
