I keep getting 'unable to check for update' to update my watch, saying it's not connected to the internet when it is because I just updated to the new iOS. It forced me to reset my watch to factory settings and now I can't update my watch or use it at all.

Can you check if your on a 5Ghz network ? Applewatch 5 and earlier only work with 2.4Ghz wlan. I have spent days trying to get my watch to update, and just realised my phone is on 5Ghz, and the watch tries to follow it.
If this is the case for you try to configure your wlan/phone to 2.4Ghz

Turns out mid way through the download, it auto connected back to the 5ghz connection, so I had to restart the pairing and update process and now the download isn't taking. There are so many glitches, and errors with this update process, and the fact tech support took days to take me through a whole bunch of dumb trouble shooting things (did you try turning it off and on, are you near your watch, etc.) only for a random person in a forum to solve it for me makes me think this will probably be the last Apple Watch I buy, if not the last Apple product because it's not worth the stress.
Thanks, this helped, it downloaded the update once I switched my router off smart connect and manually selected 2.4ghz but now it's stuck on preparing after the update seemed to download.
