When I try to export a photo from Photos on my iMac to the hard drive, which have been captured on iPhone 7 and loaded to the computer from iCloud, I don't get the 'Photo Kind' pop-up menu to be able to choose the file type to be exported.

Are you choosing export, or export unmodified original?
I notice you are using El Capitan - what version of IOS are you using on the phone? El Capitan can't process HEIC files, so you might need to upgrade your iMac to a later OS, or change your phone to use jpg images, if it is currently using HEIC.

Due to the age of the iMac I am unable to upgrade the OS any further. So I think the answer is to change the phones capturing setting, which I was not aware being able to do!
