My job dissolved my position. My iCloud was set up using my work phone and email I no longer have. But all my photos and contacts are on that phone with all my iCloud information. How can I get it without the phone number or email?

If you cannot login to https://appleid.apple.com then you will possibly need account recovery -- How to use account recovery when you can’t reset your Apple ID password - Apple Support.
