Avoid the Preview app in Big Sur?

How can I automatically open my jpeg and png files in Photoshop instead of Preview? I never use Preview and in past OS versions was able to avoid it but this update has me stumped.

Thanks for any suggestions.

In Finder, select (highlight) a file of the type that you want to change and then use the File menu > Get Info (or command I). In the "Open With" section of the Info window select the application that you want to use for that file type and then click the "Change all" button.
