I've just recently updated to MacOS Big Sur, which came with a Garageband update. While I'm very pleased with the new interface and new features on Garageband for Mac, I'm disappointed Apple has not yet added a clear and easy way to work on projects between Mac and ios. Has anyone found a way to do that outside of the "project to garageband for ios" option (which condenses the whole project into one track)?

"Share project to iOS" is still the only option, see: Use iCloud to share a project to an iOS device from GarageBand on Mac - Apple Support
But, even if the song will be flattened to moon track on your iPad or iPhone, any new tracks you add on the iOS device will be added to your original project on the Mac, which will not be flattened to one track.
"When you reopen the project in GarageBand, the new tracks are added to the original project. If the reopened song contains a Remix FX track, the Remix FX appears as automation on the Master track"
