MacOS Big Sur isn't even showing up as an available update. My macbook keeps telling me it's up-to-date with macOS Catalina 10.15.7. How can I get the Big Sur update?

You may not receive the update if you have an older device or if your work has restricted updates in an MDM profile. If your device is older than 2013 then it won’t work with Big Sur. Here’s the device compatibility list: https://support.apple.com/en-au/HT211238

Actually, MacOS Big Sur is more than an update. It’s a full-fledged upgrade.
FWIW, if your MBP is from 2013-2014, it is blocked temporarily.
