When trying to download an App from App Store, an old email address is listed which I never used to access Apps or Apple I d (I know my apple I.d. And password but that is not what comes up as my credentials when trying to use the App Store) How can I get this changed to a current email address, preferably the same as for my Apple I.d.?

Per chance, did you purchase these apps with another Apple ID that used this old email address as the "username?" If so, you will not be able to use them with your new ID and they will have to be repurchased.
No, all my Apps work, I cannot get new Apps to download as whenever I click on ‘Get’ the login that pops up has the old email address. My current Apple I.d. Works for everything but App Store.

Go to Settings, tap on your name, then Media & Purchases, sign out. Then sign in with the Apple ID you want to use.
