What do you mean by “swipe down from up?”How are you able to see what apps are using the microphone? Does the phone app have to use the microphone? I am also concerned that I see this orange dot when I am on phone calls and I hear an echo as well during my phone calls

Apple has enhanced its security for usage of microphone and camera. So users can easily see what app has used both of these hardware. What ever application will use camera or mic in iPhone, if you swipe down from up you can easily see which application has recently use camera or mic from your device. where orange light indicate for uses of mic and green for camera.

In your case you said during making calls you see the orange light right side of your device's notch, It means "phone" app from device recently used mic.
