I successfully transferred my data from old iPhone 6S Plus to new iPhone 12, except now my text messages are going to new iPhone and old iPhone, and when I send texts they show on recipient end as coming from my iCloud email address vice my cell phone number. Also alerts such as from my bank are still going to my old iPhone instead of new iPhone. I used QuickStart to set up and transfer everything to my new iphone
In the 6S go to Settings, Messages, turn off iMessage. That should de-register the old phone

If it still happens, on the new phone go to
Settings, Messages, Text msg forwarding, ensure the iphone 6 is turned off.
